Is there a way to display photo captions? What options do I need on in pages or media to make it happen?
Where do I enter data that displays?
If so, can it be done without the category of the slide set showing?

You can add/use Grid Gallery element so you could put caption on every images.
On the Grid Gallery Settings, just select ‘Text + Image’ under Content.
